Thymiopoulos “Earth and Sky” 2023 is a benchmark expression of Xinomavro from Naoussa, made by Apostolos Thymiopoulos — Greece’s leading artisan winemaker. Sourced from old, organically farmed vines grown at high altitude, the wine undergoes spontaneous fermentation with native yeasts and ages for about 18 months in large oak barrels. It shows a translucent ruby colour and an aromatic profile of sun-dried tomato, red cherry, wild herbs, and subtle spice.
On the palate, it’s elegant yet structured, combining refined tannins with bright acidity and layers of savoury complexity. Aged beautifully, it develops Burgundian finesse and depth over time. Pair with grilled lamb, tomato-based dishes, or aged hard cheeses.
