Thymiopoulos Assyrtiko Jeunes Vignes is a vibrant and mineral-driven expression of Assyrtiko, crafted by Apostolos Thymiopoulos, one of Greece’s most respected winemakers. Sourced from younger vines, it showcases a fresher, more approachable style while preserving the grape’s hallmark tension and purity. Aromas of lemon zest, green apple, white peach and subtle floral notes unfold over a backbone of characteristic Assyrtiko salinity.
On the palate, it is crisp, precise and beautifully balanced, with refreshing acidity and a clean mineral finish that reflects its northern Greek terroir. Exceptionally versatile, it pairs wonderfully with grilled fish, seafood pasta, Mediterranean salads, fresh cheeses and mezze dishes. Serve well chilled at 8–10 °C.
