From the volcanic island of Santorini, this Vinsanto 2020 by Santo Wines is a refined expression of the traditional passito (sun-dried grapes) style. Made from approximately 85% Assyrtiko and 15% Aidani, the grapes are dried for 6-8 days under the intense Aegean sun before slow fermentation and ageing in French oak barrels for about three years. The wine pours with an amber-gold hue and offers an aromatic ensemble of dried apricot, honey, toasted nuts, toffee, and subtle spice.
On the palate it is luscious and velvety with a fine thread of refreshing acidity that lifts the sweetness and gives the wine admirable balance. Serve chilled at 10-12 °C as a contemplative dessert wine or paired with crème brulée, nut-based sweets or mature cheeses for a moment of indulgence.
