From the volcanic slopes of Santorini in the Aegean, the Nykteri 2023 by Santo Wines is a striking and refined expression of the island’s revered white-grape heritage. Crafted primarily from the signature Assyrtiko grape (≈ 85%) with smaller portions of Athiri (≈10%) and Aidani (≈5%), the fruit is harvested in the night-cooling hours, pressed early and matured in French oak vats for a subtle oak influence.
In the glass the colour is clear lemon with medium intensity, while the nose opens with jasmine, green apple and pear layered on a hint of vanilla.
The palate is dry yet generous, held by crisp acidity and volcanic minerality, with a long and elegant finish echoing citrus and floral notes. Serve at 10-12 °C alongside grilled sea-bass, herb-roasted chicken or rich seafood salads.
