From the volcanic slopes of Santorini in the Episkopi, Akrotiri and Pyrgos regions, GAI’A Thalassitis is made from 100% Assyrtiko grapes grown on ancient, low-yielding vines (70-80 years old) in pumice-rich soils.
The result is a bone-dry white wine with bold personality: bright notes of lemon zest, green apple, wild herbs and honeysuckle, layered over intense minerality and a saline, sea-air finish. Vivid acidity and steely structure make it ideal with seafood, oysters, grilled fish, or simply enjoyed on its own. The profile evolves nicely for 2-5 years in good cellaring.
