Crafted exclusively from 100% Assyrtiko grapes grown on Santorini’s volcanic soils, the 2021 vintage of GAI’A “Clay” is a remarkable example of skin-contact white wine (often termed “orange wine”). Fermented and aged in modern clay vessels inspired by ancient amphorae, this wine reveals deep amber hues and an intense aromatic profile of dried fruit, vanilla, honeycomb and warmer spice.
On the palate it is richly textured yet driven by vibrant acidity and fine tannic structure — the result is a wine that combines old-vine depth, volcanic minerality and unconventional technique. Serve around 10-12 °C with grilled vegetables, saffron-infused dishes, or spice-marinated seafood.
